An eye slug is a sort of small snake like creature that attempt to charge at Link. They appear throughout the battle with Dongorongo in which they try to distract Link while Gongoron tries to knock over Dongorongo. As Dongorongo may be an evolved form of Dodongo, Eye slugs may in fact be a young form of Dongorongo, as Baby Dodongos were a young form of Dodongo.
