In Ocarina of Time, Link gets the letter from the princess herself in Hyrule Castle's Courtyard. Zelda's Letter is required to get past the guard in Kakariko Village at the gate that leads to Death Mountain Trail. After that the guard has been given the letter, he will open the gate, which will remain open for the rest of the game.
